Donut Ingredients :
- 200 g High Protein Flour
- 50 g Medium Protein Flour
- 6 g Yeast
- 3 g Salt
- 35 g Sugar
- 1 Egg
- 125 ml Cold Milk
- 30 g Butter
Mochi Ingredients :
- 540 g Glutinous Rice Flour
- 120 g Sugar
- 24 g Salt
- 60 ml Oil
- 700 ml Milk
- 4 drops Dark Green Food Coloring
Diplomat Cream Ingredients :
- 30 gr Prims Food Custard
- 200 ml milk
- 35 g sugar
- 15 g sweetened condensed milk
- 1 tsp vanilla essence
- 150 g liquid whipping cream
- 100 g Goldenfil Green Tea
1. Make the Donut Dough
Combine the high-protein flour, medium-protein flour, yeast, and sugar. Mix for about 3 minutes. Add the cold milk and egg, then mix until well combined. Add the salt and mix until halfway smooth, then add the butter and knead until the dough is elastic and fully smooth.
2. First Fermentation
Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rest for 30 minutes. After resting, divide the dough into 33 g portions, shape into balls, and let rest for another 15 minutes.
3. Proof the Donuts
Place the dough balls on donut paper. Gently press to release trapped air, then let them rise for 50–55 minutes, or until they double in size.
4. Fry the Donuts
Fry the donuts over low heat until golden brown. Remove and drain on paper towels.
5. Make the Mochi Dough
In a saucepan, mix all the mochi ingredients until well combined. Cook over medium heat, stirring continuously until the mixture thickens and is fully cooked. Remove from heat and set aside.
6. Make the Diplomat Cream
In a saucepan, combine Prims Food Custard, sugar, milk, sweetened condensed milk, and vanilla essence. Cook while stirring until thickened, then set aside to cool. In a separate bowl, whip the liquid whipping cream with Goldenfil Green Tea until stiff peaks form. Fold the whipped cream into the cooled custard until well blended. Transfer to a piping bag and refrigerate before use.
7. Fill the Donuts
Use a chopstick to poke a hole into the side of each donut. Pipe in the diplomat cream until filled.
8. Final Assembly & Serving
Wrap each filled donut with 70 g of mochi dough. Top with a small amount of diplomat cream and garnish with a biscuit. Your Green Tea Mochi Donuts are ready to serve!
